About the Author
Joel Fuhrman M.D. is a board-certified family physician, nutritional researcher, and best-selling author who specializes in preventing and reversing disease through nutritional and natural methods. My whole life until 10 or 15 years ago, I NEVER ate vegetables. I hated them. I didn't touch one. Then I started being a little more civilized, tasting them sometimes just to co-exist with other people, still disliking them. Then my body broke down and I had to change lots of things, including the way I ate, but it wasn't until I read this book, Eat for Health, that I truly completely changed the way I eat every day, and I love it. This book educated me and made the first compelling case for why eating mostly fruits and vegetables is so important, and then it gave me a path/process to shift from the way I was eating to being truly healthy. It's amazing but now I crave great, healthy foods (like the smoothies I drink every morning, or the Trader Joe's prepared salads I eat for lunch) and it's easy/automatic for me to eat healthily. It doesn't take effort. And I feel great. Thanks to this book.
I highly recommend Eat for Health. If anything, it'll give you great, interesting information, and then you can make a decision as to whether this path is for you. It educated me big time, and it changed my thinking to focus on the benefits of eating the good stuff, rather than on the drawbacks of eating the bad stuff. It gives a compelling case as to why it's so important to eat the micro-nutrients in fruits and vegetables (vitamins, minerals and phytochemicals).
The book also includes truly delicious recipes - they're really a delight to eat, though some take time to prepare, so my secret weapon is spending 1.5-2hr with my wife once a week making smoothies for the whole week (based on some of the recipes in the book). I drink two 24 oz glasses of smoothie every morning.
I first saw Dr. Fuhrman on a PBS special. He caught my husband's interest, so I paid attention. I am usually the one who researches health & nutrition and am inspired only by a select few 'eating lifestyles'. It is difficult to inspire my husband tho, so I wanted to see what caught his attention. Well, after listening to Dr. Fuhrman for just a little while, I knew his advice had merit.
So I went to Amazon to see what books were available. Instead of the one advertised on PBS, I chose this one (Eat for Health). It seemed to have all the things I wanted, which were:
1. A thorough overview of the nutritarian plan.
2. A list of foods, with nutrient density scores. (This is a great at-a-glance reference tool)
3. Recipes (I ended up loving the recipe section even more than I imagined.)
The nutritarian plan includes similarities to about all of the things I love about a few other eating plans out there. These include the CRON diet (Calorie Restriction Optimal Nutrition), The Doug Kauffman Phase diets (anti-micotic), and the blood type diet (for type A's). The nutritarian diet is not exactly like any of the aforementioned diets, but does combine the best parts of them in a way that fits my preferences perfectly. And since my husband is now on board, I can finally cook the same way for both of us!
For those of you who are avid meat eaters, this book does not forbid meat all together. You can have it occasionally, but Dr. Fuhrman does not recommend it every day. He recommends that Poultry, eggs, fish, & fat free dairy comprise less than 10% of your calories, and red meat to be eaten rarely. For meat lovers, he has devised a way to gradually phase into the eating plan so that it will be a smoother transition.
